Whether you're hosting a party or just craving a flavorful appetizer, these crostini are guaranteed to impress.

 

Cajun Shrimp Dip Crostini

Ingredients:

  • For the Crostini:

    • 1 baguette or ciabatta, sliced into 1/2-inch rounds

    • 1-2 tbsp olive oil (for toasting crostinis)


  • For the Shrimp Dip:

    • 1/2 lb shrimp, peeled, steamed with Cajun and old bay, and chopped (reserve any liquid)

    • 1 tbsp Cajun seasoning

    • 1 tsp Old Bay seasoning

    • 1/4 cup yellow onion, finely diced

    • 1/4 cup red bell pepper, finely diced

    • 1/4 cup celery, finely diced

    • 2 tbsp green onions

    • 2-3 cloves garlic, minced

    • 1 tbsp Worcestershire sauce

    • 1 tsp Crystals hot sauce

    • 4 oz cream cheese, softened

    • 1/2 cup mayonnaise

    • 1/3 cup shredded Monterey Jack cheese

    • 1/3 cup shredded cheddar cheese

    • 2 tbsp shredded Parmesan cheese (plus extra for topping)

    • 2 tbsp fresh parsley, chopped (plus extra for garnish)

    • 1 tbsp lemon juice

    • 2 tbsp butter

    • Salt and pepper to taste

 

Preparation:

  1. Heat a skillet over medium heat with 2 tablespoons of butter. Add the onion, bell pepper, and celery, cooking for 3–5 minutes until softened. Stir in the garlic and green onion and cook for another 1–2 minutes until fragrant. Remove from heat and let cool slightly.


  2. In a large mixing bowl, combine the softened cream cheese, mayonnaise, Cajun seasoning, Old Bay, cheeses, parsley, Worcestershire sauce, hot sauce, lemon juice, and any reserved shrimp cooking liquid.


  3. Fold in the cooled sautéed vegetables and chopped shrimp. Season with salt and pepper to taste, mixing until well incorporated.


  4. Arrange the sliced baguette on a baking sheet. Drizzle with olive oil and lightly season with salt. Broil for 1–2 minutes, or until golden.


  5. Spread a generous layer of the shrimp dip onto each toasted crostini. Sprinkle with additional Parmesan cheese. Broil for 2–3 minutes, until bubbly and lightly browned.


  6. Finish with fresh parsley and a light dusting of Cajun seasoning. Serve warm and enjoy!
