These Honey Garlic Butter Roasted Carrots are a simple yet elegant side, perfect for weeknight dinners or holiday feasts. The sweet honey, savory garlic, and rich butter create a caramelized coating that makes each bite of carrot irresistibly tender and flavorful.

Ingredients:
1 bag of carrots (about 1 lb)
6 tbsp butter, softened
4–6 cloves garlic, minced
2–3 tbsp honey
¼ tsp salt
¼ tsp fresh ground black pepper
Fresh parsley, chopped (for garnish)
Preparation:
Preheat the oven to 425°F and line a baking sheet with parchment paper.
Peel the carrots and slice them in half lengthwise. For larger carrots, you can quarter them to ensure they cook evenly.
In a small bowl, combine the softened butter, minced garlic, and honey. Stir until smooth and well-mixed.
Place the carrots in a large bowl and toss them in the honey garlic butter mixture until they’re evenly coated. Transfer the carrots to the prepared baking sheet in a single layer, making sure to scrape any remaining butter mixture over the carrots.
Sprinkle the carrots with salt and freshly ground black pepper. Bake for 12–15 minutes, or until the carrots are tender but still firm, not mushy.
Remove from the oven and garnish with fresh chopped parsley before serving.
