This whipped ricotta with honey and pistachios is the kind of effortless appetizer that feels fancy but takes just minutes to make. Creamy, slightly sweet, and finished with a crunchy nut topping and a drizzle of honey, it’s perfect for spreading on toasted baguette or grilled bread. A touch of lemon zest adds brightness, while fresh herbs like thyme or mint give it a beautiful finishing touch. Ideal for entertaining or elevating a simple snack, this dish is as versatile as it is delicious.

Whipped Ricotta with Honey and Pistachios

Ingredients:

  • 1 cup whole milk ricotta (drain excess liquid if needed)

  • 2 tbsp heavy cream or whole milk

  • 2 tbsp honey, plus more for drizzling

  • Zest of 1 lemon

  • ¼ tsp sea salt

  • ¼ cup roasted pistachios, roughly chopped

  • Fresh thyme or mint leaves, optional

  • Toasted baguette or grilled bread, for serving


Preparation:

  1. In a food processor or with a hand mixer, whip ricotta with heavy cream, honey, lemon zest, and salt until light and fluffy (about 1–2 minutes).


  2. Transfer to a plate or shallow serving dish.


  3. Top with a generous drizzle of honey, chopped pistachios, and a sprinkle of thyme or mint.


  4. Serve with warm crostini or grilled bread.


*Notes and suggestions:

  • Make-ahead tip: Whip the ricotta up to a day in advance and store covered in the fridge. Add toppings just before serving.
