Ingredients:
1 cup whole milk ricotta (drain excess liquid if needed)
2 tbsp heavy cream or whole milk
2 tbsp honey, plus more for drizzling
Zest of 1 lemon
¼ tsp sea salt
¼ cup roasted pistachios, roughly chopped
Fresh thyme or mint leaves, optional
Toasted baguette or grilled bread, for serving
Preparation:
In a food processor or with a hand mixer, whip ricotta with heavy cream, honey, lemon zest, and salt until light and fluffy (about 1–2 minutes).
Transfer to a plate or shallow serving dish.
Top with a generous drizzle of honey, chopped pistachios, and a sprinkle of thyme or mint.
